So it's most likely meat since he uses a knife, But if its not meat and its not from a cow or the other animals he listed then what could it be? He even put in some obscure meats that most americans don't eat like horse or frog, but he didn't list human. The only time I've ever really needed a knife for veggies was to cut it for prep but that usually doesn't include the eating bit that he's so obsessed about. I mean I'm not vegetarian but i've eaten plenty of veggies in my days but i've almost never needed to use a knife, let alone the sharpest one.
